In what versions of Word does this work?

Both Word 2007 and Word 2010 have this feature. With previous versions of Word, you need to use a third party utility.

Can I merge mutiple documents into one PDF?

You can, but this requires you to merge all Word documents into one large document first. You can then convert it into PDF format.

Will Word email the PDF document?

Word has a nifty little command called Send as PDF, so yes it will.

Can I edit the PDF document produced

You can't amend the PDF produced by this conversion unless you own the Adobe software that let's you do this. Otherwise, you will need to edit the source Word document and perform the PDF conversion again.
